There has been alot going on in the way of experimentation recently which has resulted in the water bath increasing in size to be able to more effectively cope and in the past week an additional circulator as joined my arsenal to allow me to cook at 2 different temperatures simultaneously.

Over the past few weeks I have been working on the recreation of dishes provided by my local Chinese takeaway this is what I have managed to come up with so far

Along side that I am working for some content for the chow talk section here and the blog looking at sous vide as a technology and what benefits / issues it provides to the home cook.
And to top it all off on Monday I start an online course looking at the history of royal food and feasting in the UK which I am hoping should not only be interesting down my end but should hopefully result in something that I can share with you guys.

I celebrated my birthday on Monday, so I decided to attempt one of Gordon Ramsay's more complicated recipes pork belly and langoustine with madeira sauce. This is out of one of his as far as I can tell out of print books, but it is based on one of the dishes served at Restaurant Gordon Ramsay when it was first opened

I've been working on a new type of content in an effort to provide a different way of looking at cookbooks that does more than highlight the end result and would be interested to know what you guys think of it, and how I could possibly improve for future attempts
